The Board

I have run a 34-seat neighborhood café for 11 years and written its daily letter board by hand every morning. I hire and train baristas, cost the menu to the cent, and keep the espresso program tight. When a special does not sell, I change the board, not the price, and watch what moves.

Shifts Worked

Owner & Head Barista

Ridgeway Coffee, Providence2015 – Present
  • Grew daily covers from 90 to 240 and lifted average ticket 28% by re-writing the board around 3 rotating specials.
  • Trained 22 baristas, holding milk-waste under 4% and dial-in time under 40 seconds per new roast.
  • Cut food cost from 34% to 27% by re-costing every item and dropping 6 slow sellers.

Shift Lead

Foundry Roasters, Boston2011 – 2015
  • Ran the bar through a 300-drink morning rush and kept ticket times under 5 minutes at peak.
  • Set up the weekly cupping and wrote tasting notes that went straight onto the retail shelf tags.

Barista

Kettle & Crank, Boston2009 – 2011
  • Pulled shots and steamed milk across 30-hour weeks while finishing a two-year degree.
  • Redrew the pastry case tags and daily board, which the owner kept after I left.
